Basic Working Principle

Flash pasteurization operates on the principle that higher temperatures require shorter holding times to achieve the same lethal effect. The typical temperature–time combination is 71.5 °C (161 °F) for 15–30 seconds, though parameters vary by product.

The process involves three main stages:

  1. Heating – The product is rapidly heated to the target pasteurization temperature.

  2. Holding – The product passes through a holding tube where it is maintained at the target temperature for a precisely controlled residence time.

  3. Cooling – The product is rapidly cooled to a temperature suitable for filling (typically 4–25 °C, depending on product and packaging).

A key feature is regenerative heating and cooling: the incoming cold product is pre-heated by the outgoing hot product through a plate heat exchanger (PHE) , achieving energy efficiencies of up to 90–95% heat recovery.
